Q: Dear Dr. BBQ,
What is the best way to prepare brats for outdoor cooking?
–Ted in Cincinnati
A: Hi Ted,
I have spent many afternoons in Wisconsin researching this subject over a few Old Style beers. My technique isn’t exactly the common one but it is similar and involves the same ingredients: brats, beer, onions and butter. Mine first:
First, slice a couple of big yellow onions. Grill the brats over a medium fire. On the other side of the grill put a foil pan with a stick of butter. When it”s melted, add the onions. As the brats get nicely colored, add them to the pan of butter and onions. Once all the brats are in the pan and the onions are soft and starting to caramelize, add a can of beer. Cover with foil and simmer on the grill for about a half hour. Serve on buns with the grilled onions.
The more popular method is to boil the brats in the beer, butter and onions for a while and then finish on the grill. I think this method makes brat and beer soup, as in leaving all the good stuff in the boiling liquid.
