Q: Dear Dr. BBQ,
When bottling homemade BBQ sauce, is there a particular technique to increase the shelf life of the product? When making BBQ sauce, after finished, does it have to be refrigerated or is it OK to leave at room temperature?
Thanks,
Luis
A: Hi Luis:
The only thing you can put into your homemade BBQ sauce would be commercial preservatives, which you probably don”t want to do. However, if you process the finished sauce with the pressure cooker bottling method, the jars of sauce would not have to be refrigerated until they were opened. For instructions on how to do this, see our complete article here: http://www.fiery-foods.com/dave/canning.asp
