Q:  Dr. BBQ,

 

I am aware of several methods of “pulling pork.”  My questions is:  How long should a pork butt rest prior to pulling and what is the best method to “pull” it?

A:  Hi Ren,

 

I like to tent my pork butts with foil and let them rest for at least one hour and up to three as long as they stay above 140°F. As soon as they get below that it”s time to eat or begin cooling the meat down. Yes, there are different ways to pull the meat. I prefer to just tear it apart with my hands. Not too chunky but also not that fine shred that many prefer and do with forks. I”ve also seen it pulled and then chopped and even minced. I usually toss it with a little rub and a light splash of BBQ sauce.
