Q: Dear Dr. BBQ,
Is there anything I can do with the point end of a brisket after I cook a whole brisket?

A: Hi Mikey,
There sure is. I happen to think the point is the best part for eating. It’s not as pretty for slicing, and it has a lot more fat throughout. You may need to cook it by itself for a while after the flat is done. The other option is “burnt ends.” Cube the meat and simmer it in barbeque sauce thinned with some beef broth. Serve with plain white bread.
