Hey Dr. BBQ,

I was wondering if you had any advice on using Traeger Executive? Any way to use liquid? It has an auto thermo, however what’s best to use it on …Smoke, 180°F, or the mark (that does not show a degree) between 180°F and I believe 270°F? Directions are not very thorough with unit. She mentioned that you warned about getting pellets wet. Do you think I can leave smoker outside all year if I keep it covered? Thanks,

Hi Mike,

I’ve used pellet cookers plenty. You need to climb the ladder. Start on smoke for about 1/3 of the time, then that notch above 180°F for the rest of the time. The time on smoke will drastically extend your cooking time, it may be cooking at 160°F at that time. They’re all a little different. I like to go up one more notch towards the end too. Some of them won’t run on smoke, they go out. If that’s the case you’ll have to use 180°F. The main reason is that the pellets just fry at higher temps and you get no flavor from them. So you cook low at the beginning to get the smoke flavor. Then turn it up to cook. It’s just a different process than what you’re used to. You’ll love it once you get used to it. No liquid, you won’t need it. Yes, the cooker can live outside, just keep it covered and do everything you can to keep things dry.
