I HAVE A GREEN EGG AND WHEN COOKING WHOLE BRISKETS I USE MY PLACE SETTER WITH A DRIP PAN. MY QUESTION IS DO YOU COOK IT WITH THE FAT CAP UP OR FACING DOWN?

Hi Tom,
That’s the same setup I use on my egg for brisket and I start with the fat down and flip it over to cook fat up about 2/3 of the way through the cooking.
