Hey Dr. BBQ:
I have a large gas grill island in my yard, and it does a great job for the weekend griller. You know, burgers, dogs, sausage, bone in chicken parts. I want to try my hand at smoking meats. Since I’m a novice at smoking, I figured I’d buy an electric smoker to help me keep a more consistent temp through out the entire cooking process. I’m getting lots of great reviews on the MASTERBUILT 30inch electric smoker. I’m looking to smoke larger cuts of meat now like, whole chickens, ribs, butts, and brisket. What is your opinion on this machine, or what smoker do you recommend? Also, should I go electric at all? Please repond, and thank you for your time. Sincerely,

Hi Sam,
I really don’t know much about that particular smoker but it probably works pretty well. The main drawback to an electric smoker is that there won’t be a smoke ring, which is that great red color that we think of with traditionally smoked meats. My preference as always is a Big Green Egg. It works great as a smoker, a grill, and a pizza oven.
