Hi Dr. BBQ

When preparing the Texas Brisket is there any wood or wood chips added for smoke? Thank you.

Hi Giles,
Yes there is definitely smoke involved in a Texas brisket. The old BBQ joints in Texas cook with all wood, but their pits are built for that. In a home smoker you might want to use some charcoal so you won't oversmoke the food. Now the popular choice of wood is usually rumored to be mesquite but in my experience oak is a lot more common, with a little mesquite sometimes added for a little extra kick. (Mesquite is very strong.) I also know a lot of contest cooks from Texas who favor pecan. Try them all and see which you like best.
