Last week I made Chicken with Oyster Sauce and threw in a couple of New Mexican chiles–it was great! But the next day, I had some nasty gas pains and diarrhea. I am beginning to think that eating spicy food gives me this reaction. But I love spicy food! Is there anything I can do? Any help is appreciated.

You should not jump to conclusions. Unless this happens every time you eat chiles, there is probably another cause. After eating chili con carne, people used to blame indigestion and gas on the chiles, because it seemed natural to pick on the hot & spicy element. Actually, the condition was caused by the fat from the meat. In your case, depending on the source, I would be inclined to blame the oysters. The worst food poisoning I ever experienced was from a bad oyster.
