Q: Hi Dave,
My wife and I would like to start a Portuguese-style fast food restaurant in Atlanta. We would base the concept on a number of restaurants that do this in the UK, South Africa and Australia, where they also produce sauces that are bottled for table use. I have seen a number of recipes for this sauce but was wondering if you had any other good ones. Also, how would I go about bottling a sauce? Does it need to be cooked? Are there companies that bottle the stuff for you? Are there some safety concerns?

Don’t bottle the sauce yourself. Find a contract packer to do that for you. Go to our Industry Directory from the Home Page and do a category search for them.
