Preserving Jalapenos without use of Vinegar

Hi Dave,
Although I am not new to gardening, I am new to growing Chiles. I have an abundance of Jalapenos harvested. I can not find a recipe for canning or preserving the pods short of pickling them in vinegar. Since I am sensitive to vinegar, I am looking for another way. Any help would be appreciated.

Hello Bill:
The easiest way to preserve them is to cut them in half lengthwise, remove the seeds, double bag them and place them in the freezer. They will last about a year. You also can smoke them after they turn red and made chipotles (see
here).
