Q: Dear Dave,
I am a chef and am starting my own business and restaurant. I have been making my own hot sauces and other pepper products for years, but was wondering where I can get a little extra kick. I have heard of people using capsicum. Is this available to the public? Any other additives known for spicing it up?

Oleoresin capsicum is available from Kalsec. I think their website is www.kalsec.com As far as I know, anyone can purchase it. Other additives that are less intensive are habanero powders, but you’ll have to do a search on Google to find a supplier. Habanero mash (crushed habs in salt) is available from www.pepper-hot.com
