Home-made Hot Sauce too chunky

Hi Dave–
I bought a couple of pounds of small Indian chillis (chandigars) to atempt to make a hot sauce. As this was my first attempt, the first problem was the deseeding process, there has to be a better way than cutting each pepper in half and cleaning out the seeds. So I ended up omitting that step which resulted in a lot of seeds in the sauce. Second problem was the food processor I used could not puree the ingredients so I ended up with something that looked more like salsa than hot sauce. Do you have a web page that has a selection of hot sauce recipes? Any info would be appreciated.

A hot sauce must be strained to remove the seeds, and usually a blender works better than a food processor for making sauces. For more hints, see our article "
