Dear Dave,
I’ m preparing individual containers of salsa for a church function. Should I use plastic or glass containers and what’s a good site for ordering them? In addition, do you know any manufacturers who could assist with the "canning" process? I’m wearing out my personal assembly line of relatives.

You should definitely use glass containers. Most glass manufacturers sell in bulk, so I’m not sure if you can find these in the quantities you would need. However, www.kitchenkrafts.com sells cases of canning jars, so check them out. Unless you are going to be canning commercially, no manufacturer of contract packer would be interested in helping you, sorry.
