I’ve a small sauce company I run out of my home in Oregon. I make a Smokey Chipotle Sauce, but the cost of 5 pounds worth of chipotle every month is outrageous. So I am looking to purchase a smoker so I can smoke jalapenos. Do you have an opinion as to which is best…charcoal, clectric, or LP? Also which wood works best for smoking?

Hello Tim:

Obstacles that you will encounter include:

–a steady supply of red jalapenos

–an excessive amount of time spent on the project

–cost of charcoal and wood to do the smoking

So my suggestion is to call Chipotle Texas (www.chipotletexas.com), who might have the best prices for U.S.-made chipotles. Their number is 915-769-3831.

If you are forced to make your own, I suggest first using a food dehydrator to take out most of the moisture, then smoking the jalapenos. It’s best if you first cut them in half lengthwise.

Use oak, hickory, or fruit wood to smoke them. I don’t think it makes much difference whether you use charcoal, gas, or electric. Good luck!
