Regarding making your sauce, nearly all states and municipalities require that foods be produced in an inspected, professional kitchen, so if you’re thinking about cooking a hot sauce in your own kitchen, forget it. You should find a co-packer, or contract packer to bottle your sauce for you. We have some listed in our Industry Directory.
