Dave-
I have a question for you. My little sauce business is picking up and right now my recipe roughly makes 4 bottles per batch. I want to increase my batches, I’ve been experimenting with the amount of ingredients that is going into my batches to get a large output. But the taste isn’t exactly the same. Do you know of any company that will do a recipe conversion, and is reliable enough not to steal my recipe? Thanks for the help if you can.

Shawn:
Recipe extension for large batch amounts is an art that contract packers (co-packers) specialize in. Two very reliable co-packers are Sauce Crafters (888-477-2823) and Food Processors of New Mexico (505-881-4921). Of course, they want to pack the sauce for you, not just convert a recipe.
My webmaster/designer, Harald Zoschke, adds:
"There’s also a software program available, called NutraCoster, see www.sweetware.com
We purchased a copy a while ago for its abilities to calculate nutrition content of our recipes/formulas, and to print the nutrition labels ("Nutrition Facts").
But what this program does, too, is so-called recipe scaling, it prints production requirements for any size batch.
As the name implies, the program also calculates cost – one of the most important factors in making/selling a product."
