I live in southern Spain and started growing a variety of chile plants outdoors. The plants from last year are still growing and have plenty of chiles growing. Should I remove all the fruit and cut the present plants back during the winter, or should I go ahead and plant new varieties for the coming season? We don’t get any frost down here but the overnight temperature goes down to about 5 degrees C, so I have moved many of last year’s plants into an unheated greenhouse. I am off to Thailand in a few weeks—is there any variety I should look for? I have been planting Scotch bonnet and some Malaysian varieties which have been great.

A: Hello John:
Yes, you should remove the fruit and prune the plants back. They should sprout nicely in the spring. In Thailand, try to find prik kee nu, a very small and hot chile, and prik chee fa, a larger and milder variety.
