Q: Dear Dr. BBQ,
When you finish your ribs with a brush of sauce, how long do you leave them in the cooker and at what temp?

A: Hi Kim,
The temp and time for this classic rib finishing technique are relevant to each other. I usually don’t bother setting up another grill for finishing my ribs. Depending what I’m cooking on and what else is in the cooker I will try to raise the temp as much as I can. If it’s a gas grill it”s easy to just turn it up and if it’s a kettle or a Big Green Egg I just let some air in and it will heat up. I start brushing with sauce as soon as I raise the temp and flip and brush until I get the caramelized sauce look that I want. I don’t like them too crusty so it won’t take but a few minutes and a few flips if the grill is hot. If I’m cooking in a big smoker it’s not going to get as hot so it could take a half hour and probably won’t get as crusty. Just don”‘ overcook the ribs at the expense of the finish.
