I really enjoy your book and look forward trying many of your recipes and reading your stories. The wife and kids are getting a real bang out of watching me get excited over BBQ. My question comes with me just starting out with a gas grill, I purchased a cast iron box to put the wood chips in. The big question is do I add more wood chips during the cooking time or do I leave the grill alone and not to peek like you said. With four hours into the Big Time Brisket it smells incredible. I will not be looking at it for another eight hours. Thanks for the time putting into the book, summers will be a little more flavorful.

For a long cook like that, you probably want to reload the wood box, at least once and maybe even a few times. When adding wood, it’s always best to err on the side of less, so try reloading once, and then if you think you’d like it a little smokier, try twice next time.
