Hello Doc:
A friend and I are going to start going to some bbq contest in preparation to start competing. We were wondering about cookers. I have a side firebox smoker that I am very well-versed in using. Would this do well are should we invest in somthing else?
Dan
Hi Dan,
If you can produce great BBQ with your current cooker there’s no reason to change. I’ve seen cookoffs won on just about anything you could imagine. The bigger and fancier cookers are nice and I certainly have owned a few. They typically have easier fire control so you can step away from them to do some work, socialize a little or take a nap and this is very helpful at a cookoff. As a guy I always advocate buying things that are big and shiny with lots of toys no matter if they’re needed or not, so if you really want a new cooker, go for it.
