My oldest daughter lives in southern New Hampshire and volunteers with her husband at one of the area ski resorts. This is one of her favorite winter recipes when coming home from the slopes on a cold winter night.
Honey-Mustard Glazed Pork Medallions
Pork tenderloin, which has very little fat, can be made more flavorful by marinating and seasoning before cooking. Remember when cooking pork not to overcook the meat. These medallions, marinated with mustard and chile powder, have a sweet-hot taste and light glaze from the honey. (This recipe requires advance preparation.)
Winter Squash and Apple Chowder with Red Chile–Dusted Croutons
This hearty soup combines several fall crops, namely squash, apples, and of course chile. Add a salad, crusty bread, and a nice wine and you have a memorable holiday meal.
Peppered Strawberries in Champagne
After cooking all day and sometimes for days and days, it’s nice to have a desert recipe that is so easy and takes absolutely no time to prepare, but is still elegant and delicious. In most areas you can find beautiful strawberries year round. Use a good quality champagne as the flavor really infuses the strawberries. Serve a glass of champagne with the dessert for a truly decadent finale to dinner.
