If you want this to be spicy, try using chile pepper oil instead of olive oil.
Glazed and Roasted Onions
Serve these caramelized onions in place of the creamed ones that grace many holiday tables. These too are sweet, but also hot and lower in fat and won’t fill you up! These can also grilled over a low flame, as shown in the photo. Note: This recipe requires advance preparation.
Mike’s Zucchini-Stuffed Roasted Tomatoes
Grilling zucchini brings out the natural sugars in the vegetable adding a nice flavor to the roasted tomatoes. Marinating the zucchini and Portobello mushroom before grilling adds another layer of flavor for this holiday side dish. This recipe, which is easily doubled, requires advance preparation. If necessary, Parmesan or Asiago cheese could be substituted for the Pecorino-Romano.
